CHICKEN-PINEAPPLE STIR FRY


I must admit this was not my favorite, but I will give you a couple of things to do that may help. The kids did seem to like it.



  • 1/4 c. soy sauce

  • 2 T. sugar

  • 1 T. vinegar

  • 1 T. ketchup

  • 1/2 t ginger

  • 2 garlic cloves-minced

  • 1 # boneless skinless chicken breasts cut into strips

  • 2 t. vegetable oil

  • 1 pkg frozen stir fry veggies (16 ou)

  • 1 can pineapple chunks, drained


  • Hot cooked rice


In a small bowl, combine the first 6 ingridents and set aside

In a large skillet or wok, stir-fry chicken in oil for 5-6 minutes or until done. I suggest you season the chicken with any seasoning you prefer.

Drain the excess juice.

Add the veggies & stir fry 3-4 minutes of until tender but still crisp.


Stir in the pineapple & the reserved soy sauce mixture & heat thoroughly.

Serve over rice.
