This is a variation on Maple/Dill Carrots. I did not have fresh dill SO I substituted ginger since this is a definite play on the Carribian herbs. It was delicious. If you want your children to eat carrots---this is the secret!
Pour a bag of cut or mini carrots into a skillet and cover with water. Boil until almost all of the water is absorbed and the carrots are tender. Drain any remaining water.
Add 2 T. Butter
2 T. Brown Sugar
2 T. Ginger or Dill----either makes a nice flavor
Cook over low heat until butter is melted and sugar dissolved.
