PECAN PIE

4 EGGS
1 C. SUGAR
1/8 t. SALT
1 1/2 C. DARK KARO SYRUP
2 T. PLUS 1 T. MELTED BUTTER-COOLED
1 t. vanilla
1 C. PECAN HALVES
1 UNBAKED 9 " PIE CRUST

In a large bowl, beat eggs until blended by not frothy. Add the sugar, salt & corn syrup. Stir butter & vanilla until just blended. Spread pecans in the bottom of the pie shell. Pour in filling.

Place in 350 deg oven and immediately reduc heat to 325 derees. Bake for 50-60 minutes or until a knife inserted in the center comes out clean. Refrigerate left overs.

8-10 servings

TOO MUCH CHOCOLATE CAKE



  • Devils Food Cake Mix


  • Large Chocolate Pudding Mix


  • 1 c. Vegetable oil


  • 4 Beaten Eggs


  • 1 c. Sour Cream


  • 1/2 c. Warm Water


  • 2 c. Chocolate Chips


Preheat oven 350 degrees

Spray Bundt Pan Well

Combine all ingridents except chips with mixer

Fold in chips

Bake 50-55 minutes or until toothpick comes out clean

Cool in pan at least 1 1/2 hours

FRESH STRAWBERRY TARTS


12 tart shells-cooked according to directions


2/3 c. sugar


2 1/2 T. cornstarch


1 t. lemon juice


pinch salt


1 c. apple juice


pinch ginger


3 c. fresh strawberries-sliced


Make glaze by combining all ingredients down to ginger. Cook stirring constantly over medium heat until thickened. Let cool 10 minutes.


Put a spoon full of glaze in the bottom of the tart shell


Put sliced strawberries over


Put another spoonful of glaze on top.


Chill 2-4 hours


When serving---top with whipped topping

SONJA'S BLUEBERRY PIE

I made Sonja's blueberry pie for DIL's bookclub tonight. It is REALLY good with fresh blueberries--but the frozen ones will work as well.


9 " Frozen Crust---Go ahead and cook for 1 filling pie and let cool


4 ounces of softened cream cheese


1/2 c. confectionery sugar


1/2 c. heavy cream whipped


2/3 c. sugar


1/4 c. corn starch


1/2 c. water


1/4 c. lemon juice


3 c. blueberries



Beat cream cheese and confectionery sugar together and fold in whipped cream (friend Sonja uses Cool Whip-1 small container for 2 pies)


Put this in the bottom of the pie and keep chilled


Combine the remaining ingredients and cook over low heat until it has thickened while stirring---about 30 minutes.


After this has cooled----THEN---pour over cream cheese mixture.


Chill several hours.


I normally double this recipe and make 2 pies at once. One to eat and one to share!

Blue Bell Ice Cream-# scoops of your choice

Hand Full of Heath Sprinkles

Hand Full of Mini Chocolate Sprinkles

1 play size butter finger - crushed

Toasted Pecans-Chopped

Chocolate Syrup-As Much As You Fancy

Put all on your cutting board. Use a sharp knife and spoon and cut and turn until it is mixed well.

Place in a ceramic dish that is chilled and serve.

DELICIOUS & For a Fraction of the cost

A REAL OLDIE BUT GOODIE


When I first met BC over 40 years ago, he LOVED this dessert that his Mom made regularly for her family. He said that with 5 in the family--you never got quite as much as you wanted. For his BD this year, I decided to get out the old recipe and prepare it. Not my favorite--I don't really like it---but we all know how food can trigger that nostalgic chord in us--AND BESIDES it wasn't my birthday.
1 prepared graham cracker crust or a baked pastry crust
Use mixer and beat 1 -8 ou softened cream cheese until it is fluffy
Stir in 1 can sweetened condensed milk
1/2 c. lemon juice
1 t. vanilla
Pour into crust and chill for at least one hour
Pour 1 can cherry pie filling over and chill again until serving. You could put a dollop or two of whipped cream on top.

STRAWBERRY TIME!!!!!

Friend, Barbara came for a visit and brought fresh strawberries from South Louisiana with her. They are SO SWEET and delicious! A fragile berry---they do not last long-so I baked a pie today with those we had not eaten. Strawberry pie is a wonderful way to use up the remaining berries. This recipe is fast and easy!

Bake 1-9 " pie crust

Mash 1 pint of the berries in a heavy saucepan (I use my potato masher)

Add 3/4 c. sugar

3 T. cornstarch dissolved in 1/2 c. water

Bring this to a boil and cook about ten minutes on simmer until it thickens.

Pour over the pie shell which has a pint of sliced strawberries in it.

Chill for several hours and serve with whipped cream.

WONDERFUL CHOCOLATE PIE-FEEBLE ARTISTIC ATTEMPT

Let me preface by saying, I flunked coloring in the first grade. That was at the top of my artistic ability! The pie---WELL HELLO IT'S CHOCOLATE.-------the art on top---the best thing I can say is -It Is edible! This is a recipe I have made all of my years as a Mother. LOVE me some chocolate pie!

3 eggs
1 c. sugar
1/3 c. cocoa
1/3 c. flour
4 T. Butter
2 c. milk
2 t. vanilla
1-9 " baked pie crust
whipped cream-I use extra creamy Cool Whip

Place all ingredients in an enameled or stainless steel 2 quart pot. Beat with a wire whisk. Cook over low heat, stirring occasionally, scraping sides and bottom. As the chocolate cooks you need to stir more and more and at the end of cooking constantly. Cook until thickened ---about like a thick pudding. Pour into baked pie shell and refrigerate several hours or overnight before topping with whipped cream.
