FAST & FUN SATURDAY SUPPER




Saturday night was cold and rainy---the perfect night to stay by the fire and cook at home. WHAT TO COOK???------You should always keep a few ingredients around for just these times.


2 Frozen Grilled Chicken Breasts- (Always cook extra when you are grilling and stick in the freezer for just this occasion)
1 Red Bell Pepper
1 Orange Bell Pepper
1 Green Bell Pepper
1 Sweet Onion
EVOO
Fajita seasonings
salt/pepper
Salsa of your choice
Jalapenos-sliced
Flour Tortillas
Mexican/Cheddar or cheese of your choice



  • Saute your peppers which are cut in strips and onions which you have cut into rings in enough EVOO to cover the bottom of your skillet. Remember to let you skillet and oil get hot before adding the veggies. Sprinkle the veggies with fajita seasoning.
  • Cook to your desired tenderness
  • Remove Veggies
  • Throw in the chicken which you have cut into strips---slicing in the direction of the grain & sprinkle with the fajita seasoning
  • Assemble your fajitas immediately---warm the tortillas in the microwave with a slightly damp cloth on top of for 10-15 seconds
  • Beginning with the meat and ending with the cheese layer your favorite ingredients on the tortilla.
  • ROLL & EAT
  • I sprinkle salsa inside and use for dipping outside.
  • YUMMY AND FAST & EASY
