IRISH SODA BREAD




A little green man told me that I should try this bread recipe and post it today in honor of all our Irish friends and even the small amount of Scot-Irish blood that runs through my veins. SO FAITH AND BE GLORY HERE IT IS!

2 C. Bread Flour

3/4 t. salt

1/2 T. baking powder

3 T. softened butter

5/8 c. buttermilk

1 T. confectionary sugar

3/8 c. finely chopped green onions (or regular onion)

3/8 c. grated cheddar cheese

This can be easily doubled to make 2 loaves-I cut it in half since I only wanted one loaf.

Preheat oven 425 degrees

Line Baking Sheet with parchment paper

In large mixing bowl whisk flour/salt/baking powder

Beat in butter/buttermilk/sugar to make dough (I did use a little more buttermilk to make the consistency more doughy)

Gently mix in cheese & onion

Form into ball

Place on baking sheet & flatten into 2 " thick loaf

Dust with a little more flour

Score top 4 times

Bake 30 minutes & cool on rack for a few minutes

Serve hot---if need be reheat in microwave for about 15 seconds
