SONJA'S BLUEBERRY PIE

I made Sonja's blueberry pie for DIL's bookclub tonight. It is REALLY good with fresh blueberries--but the frozen ones will work as well.


9 " Frozen Crust---Go ahead and cook for 1 filling pie and let cool


4 ounces of softened cream cheese


1/2 c. confectionery sugar


1/2 c. heavy cream whipped


2/3 c. sugar


1/4 c. corn starch


1/2 c. water


1/4 c. lemon juice


3 c. blueberries



Beat cream cheese and confectionery sugar together and fold in whipped cream (friend Sonja uses Cool Whip-1 small container for 2 pies)


Put this in the bottom of the pie and keep chilled


Combine the remaining ingredients and cook over low heat until it has thickened while stirring---about 30 minutes.


After this has cooled----THEN---pour over cream cheese mixture.


Chill several hours.


I normally double this recipe and make 2 pies at once. One to eat and one to share!
