FRESH STRAWBERRY TARTS


12 tart shells-cooked according to directions


2/3 c. sugar


2 1/2 T. cornstarch


1 t. lemon juice


pinch salt


1 c. apple juice


pinch ginger


3 c. fresh strawberries-sliced


Make glaze by combining all ingredients down to ginger. Cook stirring constantly over medium heat until thickened. Let cool 10 minutes.


Put a spoon full of glaze in the bottom of the tart shell


Put sliced strawberries over


Put another spoonful of glaze on top.


Chill 2-4 hours


When serving---top with whipped topping
