CHICKEN ALFREDO

We had April birthday's parties tonight for small group. I cooked Chicken Alfredo--on the right above.

  • 6 chicken breasts-cubed


  • 3 T. EVOO


  • 2 cloves garlic


  • 1 T. Italian Seasonings


  • 1 # fettucini


  • 4 T. Butter


  • 1 onion-diced


  • 2 cloves garlic


  • 1/3 c. flour


  • salt


  • 1 t. white pepper


  • 3 c. milk


  • 1 c. 1/2 & 1/2


  • 1 c. parmesean


  • 8 ou. colby-monterry jack


  • 3 diced roma tomatoes


  • 1 c. sour cream

Cook chicken coated with Italiian seasonings until done in EVOO & put garlic in and cook until it smells done. Set aside Melt butter and cook diced onion until tender-add garlic and cook until it smells done Add flour/salt/white pepper & cook 2-3 minutes Slowly add milks-stirring entire time Cook until smooth and creamy and beginning to thicken-being sure to stir Add cheeses until melted Mix chicken, diced tomatoes with sauce and sour cream and serve over pasta
